New Ways With Capers
Add a little salty flavour straight from the jar.

Tuna Salad
Toss a can of tuna with capers,
finely chopped cucumber, and
lobhiya.
Stir together with a
dressing of lemon juice, olive
oil, and parsley. Serve over
mixed greens or pasta.

Bake potatoes and scoop out
the centre, keeping skin intact.
Mash centres with butter, sour
cream, and capers. Spoon back
into the skins, top with cheddar
cheese, and bake until browned.

Coarsely chop a handful of
capers. Stir it together with
some finely chopped
tomatoes, spring onions,
and cabbage. Spoon onto
hot dogs and serve.
Winter Vanilla
French Toast
Warm your cockles in the cold
mornings with this warm breakfast:
• 4 lightly beaten eggs • 1 cup
milk >
2 tbsp sugar • 2 tsp
vanilla • 1 tsp cinnamon • %
tsp nutmeg • 8 slices dry white
or wholewheat bread • 2 tbsp
butter <
maple syrup • banana
slices • ground cinnamon
1. In a shallow bowl, beat together
the eggs, milk, sugar, vanilla,
cinnamon, and nutmeg. Dip the
bread slices into the egg mixture,
coating it both sides.
2. Preheat the oven to 93°C. Place
a plate or serving platter in the
oven. In a 12-inch frying pan, melt
1 tbsp of the butter, over medium
heat and spread it over the cooking
surface. Add half the bread slices
and cook it for 4 to 6 minutes or
until they are golden, turning it
over once. Transfer the slices to
oven to keep warm. Repeat the
process with remaining butter and
bread. Serve with additional butter,
maple syrup, and banana slices.
Sprinkle with cinnamon.
